Sorry about that - I guess I wasn't up to adulting for the last 8 months(!!!!?!). I've moved house again and am now comfortably settled. Today, my first day back in my apartment in a long while, I've been working on making some tasty foods for freezing and using later. The first freezer food: Shredded spicy crockpot chicken. Here's the recipe:
1-1.5lbs of chicken thighs (organic, free range! they were on sale for the same price as the non-organic, non-free range, so we decided why not)
1 cup(ish) chicken broth
1 chipotle pepper
1/2 onion, roughly chopped
2 cloves of garlic, roughly chopped
1/2tsp(ish) of chili powder
some pepper
juice of 1/2 lemon, a little bit of lemon zest
Pour all this stuff into the crockpot, mix it up, then turn it on high. The plan is four hours. I don't know. But so far it's smelling pretty awesome, so there's that. I'll check again in a bit to make sure the broth hasn't all evaporated. Then afterward I'm going to shred it up with two forks, put some aside into a bowl to eat, and freeze the rest in ziploc bags.
I also froze the rest of the chipotle peppers and adobo sauce in a ziploc bag, smushed flat, since the internet said that was the best way to store them. The lemon peels, of course, went straight into the garbage disposal (so that will have a nice citrusy scent), and the inedible parts of the garlic and onion went in the stock bag in the freezer. The rest of the onion, I expect to use in the next day or so, so I just put it in the fridge.
I even cleaned up immediately! So my kitchen is nice too. Yay! I'll let you know in a while how that all turns out.

Update:
AWESOME. Awesome awesome. There is one thing about the flavor that I would make better, but I don't know how to describe it. The addition of the lemony flavor is SO good.The chicken fell completely apart when I tried to take it out of the crockpot, so I didn't have to shred it much. And now I have five little bags of chicken in the freezer, enough for one burrito each, and I've had dinner. Hurray!
